BAMBOO LEAF MUSTARD

  • Bamboo leaf mustard, also known as “Chuan Cai” or “Fuzhou mustard,” has long, slender leaves that are tender and slightly crunchy. The leaves are smooth with a mild, peppery flavor, and the stems are crisp with a slightly fibrous texture.

  • Bamboo leafy mustard is:

    • an excellent source of vitamin A which is needed for healthy skin, bones, and eyes.

    • an excellent source of vitamin K which is multiples of the daily recommended intake.

    • a great source of dietary fiber which promotes good digestion. 

  • Bamboo leaf mustard is usually prepared as stir-fried with garlic, ginger, and soy sauce,  pickled in a brine of vinegar, salt, and spices and steamed with a light sauce or seasoning.
